Have a bunch of leftover buttercream frosting you don’t know what to do with? Don’t let it go to waste! Make some pretty and tasty buttercream candy truffles to share with everyone!

If you are a baker, I’m sure you can think of at least once but probably several times you’ve simply thrown out that extra buttercream because there way no way you could possibly use that very small amount of very lime green frosting again any time soon. I get it. But the color doesn’t matter when you can’t see it inside a truffle!

These easy candy truffles take less than 5 minutes to make (minus the freezing part, obviously). I guess a better description is they require about 5 minutes of active time on your part.
They’re a perfect low waste recipe because I don’t know about you but it seems impossible to use all the buttercream you make for a recipe. And if you do, it’s because you don’t have enough.

My buttercream candy truffles always end up being a weird concoction of a variety of colors because as I say, we’re just trying to use these bad boys up.
Also, people love them. I was worried that they would be too sweet for most people – I mean buttercream wrapped in chocolate? Sounds like it might be too much sweet. Apparently not. All 12 disappeared in about 10 minutes after I brought them over to some friends for “tasting”.
And even though they aren’t the pretties on the inside with all the different colors of buttercream sometimes, the outsides are super cute.

Dress your candy truffles up with some of these ideas:
Sprinkles (always my personal fav of course)
White chocolate drizzle
Luster dust or edible glitter
Chopped nuts
Chopped candy pieces
Coconut flakes or dried fruit pieces
Get creative and add some pops of color to your tops. Just make sure you work quickly while topping so that the pieces actually stick before the chocolate dries!
Leftover Buttercream Candy Truffles
Ingredients
- 2 cups Buttercream frosting
- 8 oz Chocolate Candy Melts
Instructions
- Let your buttercream come to room temperature. Then scoop out the buttercream into small tablespoon sized balls. Place these on a baking mat lined cookie sheet and freeze them for about an hour.
- Melt your candy coating. Once your buttercream balls are frozen, dip them in your melted candy coating. Replace them back on the cookie sheet.
- Sprinkle your optional toppings on top after dipping each one to ensure that they actually stick on. And continue until they are all dipped and sprinkled.
- Allow the candy coating to harden and voila! Buttercream truffles. Wrap them up in a pretty gift box (and maybe a ribbon) and give them to friends, neighbors, or just treat yo'self.

Final Notes…
There you are a simple and easy way to use up that pesky buttercream frosting and turn it into some delicious candy truffles. It’s amazing all the cool things we can do with things that so many consider to be food “waste”.
Food waste is not only a waste of food but also a waste of your money (hey you paid for those ingredients), time (why did you spend time on buying the ingredients and prepping the buttercream just to throw it out?), and opportunity to create something else.
Never miss an opportunity to keep yourself and others fed. It’ll lead to a better world. So in other words, don’t waste that buttercream! Make a fresh creation from it!
