It’s the new year. Well technically it’s almost the end of January but I think we’re still in the new year theme? I feel like we’ve been waiting for 2020 since last October. 2019 was stressful to say the least and I definitely don’t think I’m alone. It was a hot mess of a year and that’s probably because 19 is the most unlucky number (personal opinion?). If you can’t choose the new year’s resolutions you want to make this year, I’ll help you out.
Make this one: indulge in these tasty pink chocolate dipped cookies.
They’re amazing. They’re delicious. But most importantly, they’re so freaking chocolatey. Let me ask you, when was the last time a great cookie couldn’t make things better? I can’t think of a time where that could possibly be true. And these cookies are making 2020 even better by helping me with my fresh start on the new year.

My New Year’s Pinky Promise
Be honest, New Year’s resolutions don’t work. Because really, do we take them seriously? Maybe for a sec. But nahhh.
You know what we take seriously in the real world? Pinky Promises. Don’t deny it. Those things are much more real to us than a resolution. So this year I made myself a pinky promise to do one thing.
Let go of my chronic stress.
I’ve always been a stressed out cookie. That’s no surprise. I’ve been diagnosed with generalized anxiety, social anxiety, PTSD, OCD, and chronic stress. But it’s cool because I’m learning how to manage and alleviate all of those very dramatic and misunderstood disorders.
Of course, it won’t be overnight. But I am determined to let go of a lot if not most of my unnecessary stress because remember:
“What doesn’t kill will probably give you wrinkles”.-me having an attitude problem
Especially if you let it eat away at you.
What am I doing to remove the chronic stress?
Resting when I need to
I value sleep. I DO NOT MISS MY 8 HOURS. Ever. But as we already discussed, I’m a stressed cookie.
Wasting energy on silly worries and fears is the name of the game (I’m working on it). And even though I get my 8 hours, in the past I would work 7 days a week while trying to maintain my health, sanity, a zoo of 8 animals all cohabiting in a 500 square foot apartment, and trying to build 2 separate businesses. Sometimes your brain needs a break because you can almost hear it frying.
We aren’t machines and life gets busy. We can’t be perfect all the time and in 2020 I’m giving myself permission to rest. Not just sleep, but also to relax, have fun, and just “turn off” for a while.
I choose to enjoy the sweet life and trust that things will get done when they get done. I’m good. So I’m choosing not freak out all the time.
Setting reasonable expectations
Raise your hand if you end your days thinking about all the things you should have gotten done 🙋♀️. If you’re like many of those amazingly ambitious and smart women, you probably set unreasonable expectations of yourself everyday.
Well here’s a newsflash for all of us, we can do a lot but we can’t do it all.
So now I’m setting reasonable expectations to shed the guilt of never
being doing enough. (PS your worth is not dictated by how much you accomplish).
2020 is the year I cut myself some god damn slack and acknowledge all the amazing things I do, create, and get done. Which just deciding to try is a huge relief. Not to mention, it’s so exhausting wasting so much of my energy on something so negative and dumb.
I refuse to beat myself up over what I “should be able to do” and pinky promise to just start doing what I can and being proud of that.
Creating what I want
I love, love, LOVE baking. Which I mean, duh. I run a baking blog. I would hope I enjoy baking. But for so long, I was so focused on creating the “right” recipes. Wtf does that even mean?
But how boring! I don’t love it when my food looks like everyone else’s. Safe and right are just words that create restrictions on our creativity and lock us in a box of boring “this has been done before”.
Simply put, it’s not authentic to me and leaves me feeling constricted. Feeling constricted increases stress. So 2020 is the year to throw out all the limiting ideas of the “right ways” and the “should bes”.
I hope you’re ready for an explosion of color, delicious buttery treats, and quite a few sprinkles because those are the things that I dream of creating. Authentically me is a great personal motto to watch your life thrive.
Chocolate Dipped Cookies are the Best Stress Relief
Pink, chocolatey, and sprinkley. These are a triple threat kind of cookie. And they’re bomb as hell.
Of course if you’re not a pink kind of girl, it’s cool. Just a drop or 2 of any gel food color works. Teal. Awesome. Yellow. So sunshine. Green. I’m green with envy.
We were literally just talking about creating what we want and being authentic. So let the colors speak to you and have some fun with it.
*Just be sure to match your sanding sugar to the chocolate. Or don’t. I give your complete artistic license.
In my opinion these are best enjoyed tucked under a weighted blanket, with a cup of tea, watching Kim Possible episodes on Disney Plus.
*Side Note: Who else was completely in love with KP as a kid/still as an adult? I love that bad ass red head. No big.
Stress less and decompress by taking some time to enjoy these cookies. Because as they say, you can’t live a full life on an empty stomach.
Let’s Make These Chocolate Dipped Cookies
A couple notes on these recipes real quick.
- Make sure you use the instant espresso. This is the brand I use and I love it. It balances out some of the sweetness and trust me when I say that these are SWEET without it.
- When they come out of the oven, stick some more chocolate chips in the tops before chilling in the fridge.
- Make sure the chocolate chips are completely set before dipping your cookies, or else you’ll have some sad chips and very messy hands.
Oh-kay. Let’s do this…
Pink Chocolate Dipped Cookies
- 1 cup unsalted butter softened
- ½ cup sugar
- 1 cup brown sugar
- 2 eggs
- ½ cup melted chocolate
- 1 cup cocoa powder
- 2 cups flour
- 1 tsp baking soda
- 1 cup chocolate chips
- 4 tsp vanilla
- 2 tsp espresso powder
- ½ tsp salt
- 2 drops pink gel food coloring
- 16 oz white candy coating
- sanding extract (optional)
- Preheat your over to 350°
- Cream your butter and sugar until light + fluffy.
- Add your vanilla then your melted chocolate chips. Add the eggs one at a time mixing until just combined.
- Add all the dry ingredients (except the chocolate chips) into the mixture and stir until just combined.
- Fold your chips into the dough
- Your dough will be soft and a little sticky. Use a cookie scoop to scoop out 1 inch balls onto a silicone baking mat lined cookie sheet.
- Bake the cookies for 10-12 minutes and then allow them to cool completely. (Honestly, just stick them in the fridge on a cooling rack until the chocolate chips solidify. It's the best and fastest way)
- After the cookies are done cooling, melt your candy coating and add your food coloring. Stir it well for an even pink color
- Dip each cookie into your candy coating and then place on the cooling rack or a silicone baking mat. Before the candy coating dries, sprinkle some sanding sugar on top if you want.
Pretty simple recipe, right? It’s a perfect way to spend a lovely Sunday afternoon. Then curl up with your doggo, put on that Kim Possible and reject the Sunday scaries. Welcome the new week with a sweet treat and relaxing evening. You work hard, you’ve earned a break.
