Why These are the Best Peanut Butter Cookies Ever
It’s a huge claim to try and say that these are the best peanut butter cookies ever. But here I am claiming it!
These stay soft for literally days and are rich is peanut buttery flavor without being overwhelmingly sweet. They also are stupid easy to bake and spread on their own without any need to press them down before baking.
Basically they’re easy, delicious, and are absolutely guaranteed to put a smile on anyone’s face…unless that person has a nut allergy I suppose.

Tips for Perfecting Your Reese’s Pieces Peanut Butter Cookies
Cornstarch is a must
Cornstarch helps tenderize the proteins in the cookies keeping them softer, longer without losing structure.
We like keeping these peanut butter cookies soft and chewy. Don’t skip the starch.
Chill time is important.
Don’t skip the chill time. I know it’s tempting…but just don’t.
We made this peanut butter cookie recipe to stay soft for days….which means if the dough doesn’t get its time to chill out, the cookies are going to overspread and become a gooey, sloppy mess.
Respect the baking process and be patient. You won’t regret it.
Chilling is also for flavor
Chill time is also important to bring out more layers of flavors. Your cookies will taste richer, have a more balanced sweetness, and stay tender longer.

Can You Freeze These?
Of course! My favorite way to do this is to scoop and roll the cookie dough and then put them in a freezer safe compostable sealable bag and then just stick them in there.
Make sure you allow the dough to warm up on the counter for about 15-20 minutes prior to baking but then just bake them as normal!
They stay good in the freezer for about 3 months. After that, like with most cookie doughs, the flavor gets a wee bit off.
Don’t Overbake!
This is a way too common mistake. The centers of your cookies aren’t going to look done when they come out of the oven. When the edges are starting the brown, THEY’RE DONE!
The residual heat from the baking sheet will continue to cook the cookies slightly. Allow them to cool for a few minutes on the baking sheet before transferring them to a cooling rack to finish cooling.
*Note* If your oven temperature is off, you might have trouble with the cook times. It’s super common for oven temperatures to be off so I’m going to suggest that you have an oven thermometer (like this super cheap one) on hand to check it. Better safe than sorry with a ruined batch of Reese’s Pieces cookies!
Reese’s Pieces Peanut Butter Cookies: The Recipe

Reese’s Pieces Peanut Butter Cookies
Ingredients
- ½ cup Butter room temperature, unsalted
- ½ cup creamy peanut butter
- ¼ cup granulated sugar
- ¾ cup brown sugar
- 1 large egg
- 2 tsp vanilla extract
- 1¼ cup All Purpose Flour
- ½ tsp baking powder
- 1 tsp cornstarch
- ¼ tsp salt
- ¾ cup Reese's Pieces
- ¼ cup chocolate chips
Instructions
- In a large mixing bowl, beat together your peanut butter and butter. Once smooth and well combined, mix in your sugars.
- Beat in your egg and vanilla until just combined.
- In a separate bowl, sift together your flour, cornstarch, baking powder, and salt. Then mix into the wet ingredients.
- Fold in your chocolate chips. and Reese's Pieces. Use a cookie scoop to scoop your cookie dough onto your baking sheets. Then chill your dough balls for an hour or up to 24 hours.
- Preheat your oven to 350°F./180°C. Allow your dough to rest on the counter for 10 minutes or so before baking to heat up just a smidge.
- Bake your cookies for 10-12 minutes. The edges will start to brown and the centers may look under done. DO NOT overbake. The residual heat will continue to bake the cookies and baking longer will prevent them from staying soft.
- Allow to cool on your baking sheets for 5-10 minutes before transferring to a wire cooling rack to finish cooling.
- Store any extras in an air tight container.
