I know it’s a lot to claim that I have the best chocolate chip cookie, but here I am claiming that all over the place.
I pride myself on these cookies being everything I love in a cookie (and to be fair, I know a lot of you like enjoy their cookies the way I enjoy mine).
They’re soft and chewy. Stuffed with chocolate chips. Plus, they stay soft for literally daysssss.
And the best part? They are so easy. No chill time and requires just one bowl.
And because of that, they’re my favorite cookies to ship and to give for holidays.

The Secret to Soft and Chewy Chocolate Chip Cookies
Of course, many bakers have their own baking secrets for perfect chocolate chip cookies but here’s my biggest worst kept secret. I’m really freaking lazy when it comes to baking.

So I was determined to create a soft and chewy chocolate chip cookie that required no chill time.
And friends….I did it.

ANYWHO! How are these no chill chocolate chip cookies so soft and chewy?
Brown sugar. Like a buttload of brown sugar. Because of it’s higher moisture content, it keeps your baked goods softer and moister.
Tips to Perfect Soft and Chewy Chocolate Chip Cookies
First thing is first. Room temperature ingredients are crucial.
Creaming your butter and sugar together will help your cookies stay fluffy and soft. If you’re short on time or just need a quick hack for perfectly creamed butter and sugar, combine the two in a food processor on your chop setting for about 30 seconds to 1 minute.
If you want extra chocolaty cookies, switch out the chips with chocolate chunks instead.
When your cookies first come out of the oven, press a couple more chocolate chips into the tops of your hot cookies for that perfect chocolate chip cookies aesthetic.

Spoon and level your flour!!
This is a SUPER important step that most beginner (and some not-so-beginner) bakers make! You must spoon and level your flour.
Some readers have said that these came out hard and didn’t spread at all.
That’s because when you scoop flour straight out of the bag, you can actually get up to 150% more than you wanted to. It packs down. You don’t want it packed down.
An overly floury cookie is sad and hard. Spoon and level, spoon and level.
(Honestly the best fail safe is to measure your flour by weight. 1 cup equals 120 grams).

Soft and chewy Chocolate Chip Cookies
Ingredients Â
- ½ cup unsalted butter room temperature
- ½ cup granulated sugar
- ¾ cup packed brown sugar
- 1 egg
- 2 tsp vanilla
- ¼ tsp salt
- 1¾ cup flour
- ½ tsp baking soda
- 1 cup chocolate chips
InstructionsÂ
- Preheat oven to 350°F and line 2 baking sheets with silicone baking mats.
- Cream together your butter and sugars with hand mixer on high until smooth and light (about 2 minutes).
- Add your egg and vanilla. Beat until just combined. Mix in your flour, salt, and baking powder. Continue mixing until a soft dough has formed. Fold in your chocolate chips.
- Scoop 12-14 balls of dough and place on your baking sheet 1 inch apart. (Your balls might be larger than you normally make them, that's what makes them great. They're big ass cookies).
- Bake for 10-12 minutes. DO NOT OVERBAKE. They may not look done but take them out of the oven after 12 minutes max. They will continue to bake some as they cool. Overbaking will ruin the softness.
- Allow to cool. Store extras in an airtight container.
